I’m a huge fan of freezer cooking. Unfortunately I haven’t gotten it together enough to get a full stash of meals in the freezer. But one smart move saved dinner one day last week.
The day didn’t go quite as planned. Dinner wasn’t looking promising. As I started thinking about how quickly I could defrost chicken, I spied a Ziploc bag in the freezer. YES! The last time I made Southwest Chicken Wraps, I made an extra batch and froze them. So I sat them on the counter for half an hour and then popped them in the oven. Add green beans and – voila! – it’s dinner.
The moral of the story? It might be nice to do a full-blown freezer cooking session. But…..
You can save dinner by making a double batch of SOMETHING once in a while. (You might want to click here to Tweet that. Someone who follows you probably needs that advice. 😉 )

My freezer stash saves me all the time, even if it’s just pre-cooked chicken or ground beef as a meal starter.

I LOVE having pieces of meals cooked and in the freezer too. Hasn’t happened recently {blush} but it’s on my get-back-to-it list for sure. Thanks for the reminder!

Becca, seriously try Amy’s recipe. I was SO intimidated by it until I tried that one. Now it’s a weekly meal! Easy peasy. 🙂
