I’m embarrassed at how long it’s been since I’ve done a Menu Plan Monday post. {blush} I mentioned late last week that life at our house has been downright crazy. One thing that we’ve done a decent job with though is eating at home. We’ve kept ingredients for dinners on-hand, even if I haven’t put together an official menu plan for each week.
This week my main goal is to regain control over the chaos that has become our family schedule. This includes a more regular bedtime (even for the grownups!), official menu planning, and reworking our homeschool daily schedule. It’s a lot to tackle, but it’s necessary if we’re going to avoid going all-out crazy around here! I’ll be sharing with you very soon some excellent resources that I’ve found to help with time management. I’m guessing I’m not the only one who struggles with that! 😉
I’d LOVE to do another Two-Week Cooking Project, but I didn’t plan for it this week. In fact, after my HUGE-O shopping trip from last week, I’m planning this week’s menu using what’s on-hand. Jason spent this evening grilling a bunch of chicken so that we could use it throughout the week. What a time-saver!
Here’s our menu plan for this week:
Sunday:
Grilled Chicken with Italian Spice Rub {drool}… Recipe coming soon
Corn on the Cob (from the Farmers’ Market – yum!)
Monday:
Pioneer Woman’s Favorite Pizza
*This is how we’re going to use the eggplant that we got at the Farmers’ Market last week.
Tuesday:
Cream Cheese Chicken & Vegetable Soup
*I’m going to use more of the leftover chicken from Sunday, hoping that the seasonings will give the soup a nice Italian flavor.
Wednesday:
Grilled Chicken Salads – Made with leftover chicken from Sunday’s dinner
Thursday:
Chicken Parmesan
*Using up the last of that chicken. I truly love it when my hubby fills up the grill.
Friday:
Broiled Tilapia Parmesan
Baked Yams
Veggie Tray with Dip (maybe Amy’s Homemade Ranch?)
Saturday:
We usually eat dinner with the worship team at our church’s new Saturday Night Ignite service.
My goal for next week is to start planning different breakfast foods. We’re feeling the cereal burn-out and are ready for some changes there too. If you have any great breakfast ideas, I’d love to have them!

This sounds pretty much like our menu over the weekend. Saturday I baked a chicken in an oven bag, and we ate it with sides that night. I boiled down the carcass for stock and Sunday I used some of the meat and stock to make a soup that turned out delicious (im gonna freeze a bunch), and then we’ve had chicken salads.
I really really am wanting to work on getting back into the menu planning habit as well!
