For this week’s menu, I’m working hard to plan breakfast out of the box… the cereal box that is. I had been doing better with making breakfast, but the busy holiday times (and us getting up later during that time) meant I relied on boxed cereal WAY more than I liked. So this week’s focus for me is breakfast. My friend Amy is awesome with breakfasts fit for a king, so this week I’m going to follow her lead and use some of her recipes (which I’ll link to below).

Ham, Egg, and Cheese English Muffins (Making a few extras for the freezer too)
Homemade Cinnamon Rolls
Homemade Granola
Eggs, Toast & Fruit
Peanut Butter Banana Toast Sandwiches (Yes, we made that up one time and it stuck!)

Chicken Noodle Soup (made with homemade broth… yum!)

Lasagna with Homemade Bread (2 nights’ worth)
Southwest Chicken Wraps with Homemade Black Bean & Corn Dip
Mexican Rice & Beans with Corn
Chicken & Sausage Stew
Broiled Tilapia Parmesan
Loaded Baked Potatoes (Making the potatoes in the Crock Pot)
