This week was the first time that we had made it to the local farmers’ market, and I’m SO glad we went! Emma had a ball, and it’s good for her to meet some of the people who grow the food we eat. Our farmers’ market isn’t huge, but there was a nice selection of produce there this week. I even went out on a limb and bought a couple of things that I have no CLUE what to do with, an eggplant and some rhubarb. So if anyone has recipes for those, I’d LOVE to have them!

Oh my! Those look yummy. I was considering a crisp of some sort because I don’t care much for pie crust. So maybe that’s the route I’ll go! Thanks!

for the rhubarb, this coffee cake is really good, really easy too! don’t remember where i got it though…
Rhubarb Cake:
“1 egg
1 1/2 c. sugar
1 c. buttermilk or sour cream
1/2 c. shortening
1 tsp. vanilla
1/4 tsp. salt
1 tsp. soda
2 c. flour
Topping:
1/4 cup sugar
2 tsp. cinnamon”
“Beat egg, sugar, cream, shortening, vanilla. Add flour mixture & rhubarb. Pour into pan.
Mix sugar & cinnamon and sprinkle over cake batter. Bake 350 for 35 minutes.”
