The last time we got together with friends, I told them we would bring some snacks. I was in the mood to bake. The problem is that Jason’s eating gluten-free right now. So the cinnamon rolls that were rising on the counter weren’t going to be much use to him. I hated to make something he really likes (but can’t eat right now) without making something that he CAN eat.
My first thought was to make some homemade granola bars. Then I wondered what would happen if I made them bite-sized instead. I ended up with these absolutely yummy gluten-free, flourless oatmeal chocolate chip bites. They’re a cross between a cookie and a granola bar. And, gluten-free or not, they were a hit with everyone.
Oatmeal Chocolate Chip Bites {Gluten-Free & Flourless}
Ingredients:
- 1/2 c. packed light brown sugar
- 5 Tbl. coconut oil
- 1/4 tsp. salt
- 1 Tbl. flax seeds*
- 2 T. raw honey
- 2 eggs
- 2 c. old-fashioned oats (For the recipe to be completely gluten-free, be sure to buy gluten-free oats.)
- 5 oz. Enjoy Life mini chocolate chips (I used 1/2 of a 10 oz. bag.)
Directions:
- Preheat oven to 350°.
- Line 3 cookie sheets with parchment paper.
- Melt the coconut oil. Let it cool.
- Mix cooled coconut oil, sugar, salt, and flax seeds. (Warning: They don’t mix very well.)
- Add honey and eggs. Mix well. (It still doesn’t mix very well.)
- Add oats and mix. (Now it will start mixing well!)
- Stir in chocolate chips.
- Drop the oatmeal dough onto the cookie sheets by rounded teaspoonful. Leave at least an inch between them. They will spread a bit.
- Pop the cookie sheets into the freezer for about five minutes.
- Bake about 10 minutes or until the bottom edges start to brown. (See that yummy browned area on the bottom edges in the picture? That’s my husband’s favorite part.)
- Allow the oatmeal bites to sit on the cookie sheets for 10-15 minutes before trying to remove them. They’ll solidify a bit more by that time.
We learned that storing these in a loosely-covered container is best. If you cover them tightly, they get a bit mushy. Ask me how I know.
* Don’t skip the flax seeds. They help absorb some of the moisture in the bites. I forgot them once and we had quite the gooey spreading mess on our hands. Edible. Just messy.
