
Well we did it! Last week’s menu plan was pretty ambitious, and we made just about all of it. I’ve found that just having a plan is the key. If I know ahead of time what I am hoping to accomplish, I’m more likely to get it done.
So here’s the plan for this week.
Breakfasts: My plan includes some low-maintenance breakfasts and some that take more prep. Morning are a little more hurried cooking-wise, so I’m going to try mixing the dry ingredients up the night before for the things that need to be cooked/baked.
Eggs, Toast & Fruit
Strawberry Shortcake Stacked Pancakes
Homemade Chewy Granola Bars (without corn syrup!)
Baked Oatmeal Cups
Smoothies & Toast
Leftover Breakfast Pizza (from a dinner version)

Stuffed Pepper Casserole
Mini Meatloaves, Mashed Potatoes, Green Beans
Breakfast Pizza – I decided morning was too rushed, so we’ll try it for dinner.
Broiled Salmon (olive oil, salt & pepper), Apple Cinnamon Glazed Sweet Potatoes
Pita Pizzas
Chicken Salads (made with rotisserie chicken)
