Tuesday – Leftover Potato Soup
Wednesday – Quesadillas (directions below) with Spanish Rice (from a mix)
Thursday – Canned soup and grilled cheese sandwiches
Friday – Homemade Pizza
Saturday – Chicken Cacciatore with salads
Sunday – Fettucini Alfredo (recipe HERE) with green beans
We made really easy quesadillas! First, mix some refried beans with salsa. There’s no specific measuring. Just add a little of both so that it’s still pretty thick. Spray one side of a flour tortilla with olive oil cooking spray (which browns better than canola spray). Lay the sprayed side down in a heated skillet. Add some shredded cheddar, refried beans/salsa mixture, and a bit more shredded cheddar. (The cheddar acts like glue to hold both sides together.) Heat until browned, flip, and heat until browned. I cut them with a pizza cutter, and we can dip them in additional salsa or sour cream. They’re a big hit around here!
