Menu Plan Monday: The Two-Week Cooking Project Plan

I’m so relieved to have two weeks’ worth of meals in my fridge and freezer right now! It makes menu planning a LOT less stressful!  (If you didn’t take part in our Two-Week Cooking Project, you can always do your own version. You’ll find all of the information from ours HERE.)

My goal is to make the meals that use the fresh produce first. So here’s the plan for this week.

Sunday
Crock Pot Pizza-Stuffed Peppers
If you also made these, don’t cook them for four hours! They were a little over-done. Edible…. but over-done.

Monday
BBQ Chicken, baked yams, green beans

Tuesday
BBQ Chicken Salads

Wednesday
Homemade Pizza

Thursday
Hamburger Stroganoff, Corn on the Cob

Friday
Southwest Chicken Roll-Ups

Saturday
Chicken Fettuccine Alfredo with side salads

That’s probably the easiest menu plan I’ve done in quite a while! Because we took the time this weekend to prep everything, I know exactly what’s for dinner this week and next week. Talk about making meal planning less stressful!

    We are enjoying the yummy meals I have stashed away in our freezer! I just read about the time change on the peppers. Hope mine aren’t over done,as I put them in the crock pot about 7 this morning and won’t be home until after 5. My husband called to tell me they smelled awesome! Maybe he will keep an eye on them for me! Thanks for the inspiration! Looking forward to cooking with you again in two weeks!

      I hope they weren’t mushy by the time you ate them! Ours were a little over-cooked but still tasted good. And your hubby was right…. They do make the house smell great!!
