
Is June really almost over??
I had every intention of doing another round of freezer cooking for June. But my work schedule and life schedule interrupted that plan. *sigh* The good news is that I had actually bought everything to do my freezer cooking, meaning that I’ve had lots of ingredients on-hand to make some great meals.
I’m going to finish out June with what we have in our pantry, fridge, and freezer and then give freezer cooking another try in July. Here’s what we’re making with our on-hand ingredients this week.

Broiled Tilapia
Seasoned Rice
Green Beans
Tuesday
Homemade Pizza
Wednesday
Enchilada Pie
Thursday
Grilled Cheese
Frozen Veggies
Friday
Chicken ‘n Rice Casserole
We’ll be heading to the grocery store on Saturday, so I don’t have a plan yet for the weekend. My guess is that – weather permitting – the plan will include my husband doing some grilling!
