I just received some awesome feedback from Gina, a Saving & Giving reader. She took part in our Two-Week Cooking Project. Here’s her story in her own words:
“I decided to do the two week cooking with you. I did make the Southwest Chicken burritos (Big hit!). I made enough for 2 meals for a family of four. I also made beef and bean burritos (2 meals), made taco meat for tacos for 2 meals and just some ground beef for sloppy Joes and spaghetti. I I also made up a meat loaf that I just have slide into the oven.
I am so glad that I did this! Our central air conditioning went out on Saturday. The inside of my house has been hitting 92 degrees at night! I was not about to turn on the oven to cook anything. I just had to pop some of the burritos in the microwave and dinner was done!
Thank you so much for thinking of the 2 week cooking instead of the once a month. I kept saying I was going to do the once a month cooking but never got around to it. So when you said 2 week cooking, I thought that was something I could do. So glad that I did!”
What a blessing to have nutritious, home-cooked food ready to be heated without heating up the kitchen!
If you did the Two-Week Cooking Project last time, then you’re probably eating the second half of your meals this week. That means that it’s time to start planning for the next round of cooking.

I really love the thought of a 2-week cooking plan, it seems much more manageable than a month. Our freezer was too full last time to participate–but I hope to this time. (We had a lot of frozen premade voila type meals, but we are trying to use those up and get to homemade).

I would LOVE for you to join us, Amanda! Your comment on one of my Menu Plan Monday posts a few weeks ago actually inspired the whole idea. I realized that I wasn’t alone in being tired of my lack of motivation to cook. It’s much more motivating when you’re in it together! 🙂

Yes! Let’s do it again…I love this method and it has been super easy (and even exciting) to just pull meals out of the freezer for the next day. In fact, I was checking out your blog today JUST to see if you had anything in the works!
I must say that my favorite part is the smaller amount of dishes I have to clean up each night. It wasn’t exactly fun cleaning up after the big prep day, but worth it for less time in the kitchen each night.

I’m SO with you on the dishes, Erin! I’m spoiled by having a dishwasher, but I’m thinking we may have run it less with the freezer cooking.

I know I am going to do it again with you! AC is still not working. Last night I grabbed some meals out of the freezer, grabbed my kids and went to my mom’s house for the night and provided dinner! She was thrilled.
