Two-Week Cooking Project: The Menu

I’m gearing up for another round of our Two-Week Cooking Project, and it sounds like some of you might be in it with me. I just wanted to share my menu plan with you. Feel free to use this or create your own menu plan. No matter what we’re cooking, we’ll be doing it together!

Chicken Enchilada Casserole (1 meal)
Chicken Fajitas (1 meal)
Hamburger Hot Dish (like homemade Hamburger Helper) (1 meal)
Sesame Beef Steaks (1 meal)
Crock Pot Chicken Parmesan (2 meals) (Didn’t get to this last time!)
Homemade Pizza (2 meals)
Grilled Chicken ( 2 meals)
Lasagna Casserole (2 meals)
Leftover Buffet (2 meals)

I’ll be back later this week with the recipes and shopping list. My plan is to cook on Saturday.

    I start back to school Thursday, so yesterday, I did a mini version of this myself (you inspired me). So here is what is in the freezer: 3 containers of pickles, 3 dinners worth of chicken, bbq, cubed, and shredded, 2 containers of salsa, 1 taco meat, 1 spaghetti sauce, and 1 set of stuffed peppers.

    My two weeks of meals are in the freezer and ready to go! We are having:

    Tacos
    Hamburger Helper
    BBQ Chicken
    Chicken Casserole
    Lasagna
    BBQ Meatballs
    Spaghetti and Meatballs
    Pizza
    Red Beans and Rice
    Smoked sausage with peppers and onions
    Meatloaf
    Chicken Parm

    I cooked on Saturday and made Chicken Enchiladas (x2), lasagna casserole (x2), 1 pizza casserole, BBQ pulled pork (x2), chicken for tacos, steak fahitas (x2), 1 taco bake and sausage and biscuits for breakfast (x8).
