Simple Healthy Dinner Solution for Busy Evenings

Is there a night each week that causes chaos with your mealtime plans? Ours is Wednesday. This year we agreed to let Emma add a second dance class to her schedule. It’s over at 6 p.m., meaning that we get home around 6:15. Since we usually eat dinner between 5:00 and 5:30, this later time throws a monkey-wrench in our meal plans.

I usually do planned leftovers or a Crock Pot meal that can be eaten as soon as we get home. The problem is that sometimes I opt to make chili or soup in my Crock Pot, and Emma isn’t a fan of either of those. So while this plan makes things easy for the grown-ups, it’s not a whole family solution all the time.

I suppose I could choose any old frozen dinner or canned pasta for Emma, but I don’t want her eating foods that aren’t healthy. We make such an effort to pump her full of healthy foods during the day. I sure don’t want to sabotage that at dinnertime!

I just heard about Kidfresh Frozen Meals, a healthy option for kids and a convenient go-to meal for busy moms and dads. I thought it was worth checking out as a possible dinner solution for some of those Wednesday dance nights when Emma’s not crazy about what we’re having for our quick-prep dinner. (Disclaimer: We don’t let Emma dictate what we have for dinner. She’s a very UNpicky eater, so we do try to honor the things she has tried and truly doesn’t like. Fortunately that list is short.) Emma was most exited about the pasta with meatballs meal. Pasta with meat sauce is a favorite meal of hers when mama’s cooking, so that wasn’t a big surprise to me. I’m guessing that she’ll really like the mac ‘n cheese too (and I like the hidden veggies they added to it).

I’m really excited about having something quick for dinner when things get crazy on dance nights. While I won’t use a frozen meal every single Wednesday (much to Emma’s disappointment I’m sure), it’s peace of mind to know that I have a few in the freezer for those times when I need something. I feel good about it being a more natural option than some of the other frozen meals we’ve tried in the past. Plus after hearing some of the other dance girls talk about how they eat cheese crackers or fast food on dance nights, I like having a healthier alternative.

    The night that causes chaos in our house each week is Saturdays…our son has a competition he goes to and we are gone right around dinner time. We’ve started getting pizza on these nights, but it is getting old. I love the part where you said you honor the things she’s tried but doesn’t like! I so agree with that.

      Oh those chaos nights are SO hard, and pizza is definitely a quick go-to. I like having the option of pizza, grilled cheese, or something like the Kidfresh meals. That way we feel like we have some sort of choice.
