We’re doing a little traveling this weekend, so I have an abbreviated menu plan for this week.
Monday – Beef Burgundy (Recipe HERE) – We didn’t get to have this last week after all, so it’s on for today. I actually baked it last night, so tonight we’ll just be reheating. The flavors really mingle when I do this. I just realized that this might be a good crock pot meal too. I’ve never tried it in the crock pot, but I’m going to do that the next time I make it.
Tuesday – Leftover Beef Burgundy with corn on the cob
Wednesday – Chicken Cacciatore with Salads
Thursday – Grilling night! Grilled Chicken marinated in Lawry’s 30-Minute Marinade Steakhouse flavor (a new favorite), flavored noodle mix, salads —– Okay… It’s supposed to rain all week, but I’m really hoping we’ll get a break long enough to grill. Otherwise, we’re doing baked fish. Not nearly as tasty…. but that’s okay.
Friday – Homemade Pizza
Saturday & Sunday will be travel days, so we’ll be eating on the road and at my mother-in-law’s house.
