Menu Plan Monday – An Extra Week from the Freezer

Life doesn’t always work out according to our schedules, now does it? Our Two-Week Cooking Project turned into three weeks’ worth of meals at our house. But you know, sometimes life just happens.

If you’re interested in joining us for our next Two-Week Cooking Project, stop back throughout the week. I’ll be posting my menu plan, recipes, ingredient list, and shopping list. Of course, you can always use your own recipes. We’ll still be here to cheer you on as you plan ahead to make meal times less stressful. Here’s what we’re finishing up this week.

Sunday
Grilled Chicken Salads
I didn’t defrost the chicken soon enough to do the Crockpot Chicken Parmesan, so we ended up grilling it. Now we have leftover chicken for salads…. Totally unplanned!

Monday
Crock Pot Stuffed Peppers

Tuesday
We’ll be out of town this evening, so we’ll be eating dinner out.

Wednesday
Homemade Pizza

Thursday
Crock Pot Bean Casserole

Friday
Crock Pot Bean Casserole

Saturday
Southwest Chicken Wraps
This will most likely be our cooking day, so I wanted to plan something easy for our meal.

    I just finished prepping my next two weeks’ worth of meals. The next few weeks are going to be hectic, so I am so glad this is one less thing I will have to worry about. My son plays fall baseball and my husband is a football coach, and both have games starting this week. My father-in-law is having open heart surgery next week, so this little bit of prep will save me lots of time to enjoy and take care of the little things over the next 14 days. Thanks for getting me hooked on two week cooking!
