Menu Plan Monday: Sticking to It

October 16, 2011

I believe we won the battle of the leftovers last week! It’s refreshing to not throw away a ton of food at the end of the week. I think the key for us using up our leftovers was planning lunches last week. That made me think through what was in the fridge and what would probably be left for meals.

For dinner this week, I’m going to try to make some space in the pantry by using up some things that have been lingering there for a while. I’m also hoping to have hubby fill the grill tomorrow so that we can use the meat through the week. That seriously cuts down the in-the-kitchen time… which keeps this mama happy!  🙂

Here’s the plan for this week.

Breakfasts

Homemade Granola
Eggs, Toast & Fruit
Pancakes & Fruit
Cinnamon Rolls
Smoothies with Oatmeal
Fruit & Yogurt Parfaits
Leftover Pancakes

Lunches

Sloppy Joes (leftover from the weekend)
Grilled Cheese Sandwiches, Veggies & Fruit
Cheese Quesadillas & Veggie Tray
Soup & Bread
Loaded Baked Potatoes

Dinners

Grilled Pork Chops, Crock Pot Baked Potatoes, Carrots
Grilled Chicken with Italian Spice Rub, Rice, Salads
Grilled Chicken Salads, Rolls
Pita Pizza
Chicken Parmesan made with Leftover Grilled Chicken
