
Monday is Emma’s first day at school and my mom’s birthday! Busy day!! To make it even busier, I plan to do my Two-Week Cooking Project food assembly Monday. I know that the house will be pretty quiet until noon, so I figured that was the ideal time to cook. (It will also keep my mind off the fact that my baby is starting kindergarten. *sniff*)
Once I get everything assembled and into the freezer, here’s what we’ll use this week.

Monday
Grilled Chicken
Steamed Broccoli
Wild Rice Mix (because the yams at my Kroger looked really OLD – ick!)
Tuesday
Crock Pot Chicken Parmesan (making a double batch)
Wednesday
Homemade Pizza
Thursday
Leftover Chicken Parmesan
Friday
Chicken Enchilada Casserole
Saturday
Possibly my mom’s birthday dinner – We decided to wait until the first week of school was done so Emma wouldn’t be exhausted. For her dinner, I’m leaning towards another round of grilled chicken (because Jason’s an awesome griller!), yams, and fresh green beans (if the yams and beans look better this week!). Of course there will be birthday cake, but I’m going to let the birthday girl choose what kind. Just know that it will have number candles. Emma will see to that!

Hamburger Hot Dish
That will get us through the first part of our Two-Week Cooking Project meals.
