Well, it seems that life will be back to normal for us this week. Yay! I’ve planned a pretty low-key dinner menu so that I can truly enjoy a break. Here’s what’s cooking this week.
Monday
Grilled Chicken Salads
We’re making these with chicken that we grilled for Saturday’s dinner.
Tuesday
Baked Fish
Noodles & Sauce
Fresh Green Beans
Wednesday
Quesadillas
I have leftover refried beans/salsa mix from last week’s quesadillas. I froze it, so we’ll see how it is the second time around! I’m planning to add a little chicken to make it different.
Thursday
Spaghetti & Salads
Friday
Homemade Pizza
Saturday
Grilled Chicken or Pork Chops (depending on our mood)
Baked Yams
Grilled Veggies
Sunday
Our small group is meeting, so I just need to take a snack.
Overall, it’s a pretty basic meal plan. No new recipes. Nothing time-consuming. Nice and easy!
