I’ve also not spent much time planning meals for the coming week. So I’m going to do a fly-by-the-seat-of-my-pants menu plan! I do have a fairly well-stocked fridge, freezer, and cupboard, so I know that I have the makings of some great dinners.
How do I do a fly-by-the-seat-of-my-pants menu plan? I still know that planning is the key. I can’t just walk into the kitchen at 5:00 and expect some lovely meal to jump out of the cupboard. When I try to do this, I find that the meat is still frozen and the pasta is uncooked. Instead, my plan is to take stock each evening and see what sounds good (and easy!) for the next night. That gives me time to thaw, marinate, prepare a Crock Pot, or do whatever steps I need to complete to make sure that we have a yummy, nutritious meal on the table the next day.
I’ll keep you posted throughout the week and let you know what kinds of meals we come up with!
