Menu Plan

So have I told you that my computer is dead? {moment of silence please} Yes, it decided to stop working over a week ago. I lovingly packed it with as many of those little air pillow thingies (the ones that come in our Amazon boxes) as possible and shipped it off to the closest Apple certified repair guy. He knew right away what was wrong (the most expensive part possible), and he ordered the part. Unfortunately we’re still waiting for Apple to ship the part. So I’ve been computer-less for over a week, borrowing my sweet husband’s computer when he’s not using it for work.

You would think my house would be sparkling and I’d be cooking gourmet meals, right? Wrong. We’ve been crazy-busy with the new puppy, so we’ve been doing the bare minimum. I confess that, while I did pack up the Christmas stuff, it’s all still in tubs in the living room. Well, there IS the tree that’s un-decorated but still standing too. I was debating what to do with those strands of lights (the pre-lit-attached-like-they-have-super-glue-on-them kind) that decided to quit working this year. So that’s on tomorrow’s agenda.

Since I’m hoping to have my computer back this week, I’m going to be conservative with my guess at how much kitchen time I’m really going to have. That means we’ll be keeping the menu quick and simple. I also got a great deal on chicken last week, so you’ll notice more chicken than usual this week.

:: Breakfasts ::

Apple cinnamon granola
Baked oatmeal muffins with dried cranberries
Gluten-free strawberry muffins (I have strawberries from summer in my freezer!)
Eggs, sausage, fruit
Gluten-free pumpkin muffins
Cereal & fruit

:: Lunches ::

Leftovers
Sandwiches, veggie tray
Munchy lunch (popcorn, apples with peanut butter, veggies)
Oven-roasted sausage and veggies
Chicken noodle soup (made with gluten-free pasta I found on a manager’s special last week)

:: Dinners ::

Chicken fried rice
Homemade meatballs with marinara sauce and sauteed veggies (I have sauce in the freezer.)
Delicious Slow-Cooker Chicken, baked potatoes, broccoli
Sesame chicken stir fry over brown rice
Taco chicken baked potatoes with salsa
