My all-time favorite, never-fail recipe is for Teriyaki Pork Roast. I’ve made it many times, and it’s fabulous EVERY single time!! I’d love to give someone credit for the recipe, but I have no idea where it came from.
This recipe also makes a great marinade for grilling! Just add 2 T. of olive oil.
Teriyaki Pork Roast
3/4 c. (6 oz.) apple juice
2 Tablespoons sugar
2 Tablespoons soy sauce
1 Tablespoon vinegar
1 teaspoon ginger
1/4 teaspoon garlic powder
1/8 teaspoon pepper
about a 2 3/4 pound pork roast (I usually make a smaller one)
Mix everything except the meat in a crock pot.
Add the roast. Turn to coat. Leave it fat side up.
Cook on low for 7-8 hours.
We like to serve this with green beans and baked yams. We often freeze the leftovers and eat them a couple of weeks later. It’s just as good the second time!

If you’re in a hurry, you can get this pork roast ready for the oven instead. Follow the directions above but use an oven-safe roaster. Cover and cook at 325 degrees for 30 minutes per pound. The meat should reach an internal temperature of 170 degrees. It’s not quite as tender if you make it in the oven, but it’s good if you forget to start your crock pot. (Yep! That’s a tip from my personal experience!!)
