
Last week was one of THOSE weeks. Emma woke up Monday throwing up. She was down for the count Monday and Tuesday. Just as she was getting back on her feet (literally) Wednesday, I got sick with a nasty cold. And just when I was starting to feel better, she caught my cold. Fortunately Jason has stayed relatively healthy through it. Hmm… Maybe HE should cook this week. 😉
But you know what weeks like that do to your life… and to your menu plan. I had a beautiful plan written up for last week. I didn’t get to post it (thank you, throwing up). I didn’t get to use it. I had to wing it. We ended up eating a lot of soup and snacky-type meals. The good news is that we ate up a lot of leftovers.
Now that everyone is on the mend, I’m determined to make this week work with what’s in our pantry, fridge, and freezer. I went to Kroger today and bought some things that I thought Emma might eat with her stuffy nose and sore throat. (She’s been pickier while sick, and that’s rare with her!) I also picked up some odds and ends that I knew we were out of. Truth is… I just don’t want to have to go back to the grocery store this week. So I’m going to take on the challenge of cooking with what’s here. Here’s my plan:

Homemade Granola – I think I’m going to try Myra’s Autumn Spice Granola this week.
Eggs, Toast & Fruit
Homemade Cinnamon Rolls – I’m going to make Amy’s and bake half and freeze half.

Sandwiches & Veggie Tray
Soup & Grilled Cheese
Quesadillas
Loaded Baked Potatoes
Dinners
Italian Spice Rub Grilled Chicken, Baked Potatoes, Green Beans
Grilled Chicken Salads (made with leftover chicken)
Broiled Tilapia Parmesan, Rice, Salads
Italian Chicken Packets
Sticky Chicken in the Crock Pot, Baked Yams, Salads
Chicken Wraps (Leftover Sticky Chicken, cheese, veggies in a wrap)

Oh no what a week, hope this week is starting out much better. And I also hope you guys enjoy the Sticky chicken.
Oh my word! We made it tonight and loved it. I missed that minor (ahem) detail about putting the chicken breast side down. Oops! Next time though. My broth is in the kitchen simmering away right now. Smells delicious! Thanks for the frugal recipe!
