Berry Delicious Pancakes

Emma is currently hungry for pancakes almost every morning. While I don’t make them for her every morning, I do like to make them once in a while. Breakfast is a time when we get lots of whole grains, and I don’t want pancakes to get in the way of that! So I’ve adapted a favorite pancake recipe to make it healthier and more filling.

Berry Delicious Pancakes

2 c. flour (I use white whole wheat.)
2 T. baking powder
1 t. salt
2 eggs
1 1/4 c. milk (possibly a bit more if they’re too thick)
1/4 c. lighter flavor olive oil
1 c. fresh or frozen berries (thawed and drained)

Mix the dry ingredients.
Add eggs, milk, and oil. Stir with a whisk.
GENTLY stir in the berries.
You may need to add another splash of milk. It just depends on how much liquid came with your berries.

These are excellent topped with the fruit topping from my NY Style Cheesecake.
