I mentioned a while back that I was struggling with falling back into the cereal rut for breakfasts. One of my healthier eating goals has been to think out of the cereal box for breakfast this year. So I went in search of some non-box breakfast ideas. Here are some of my favorite finds.
- Blueberry Baked Oatmeal :: Lynn’s Kitchen Adventures
- Breakfast Parfait :: Taste Spotting
- Berry Oat Scones :: Kumquat
- Homemade Pop Tarts :: Smitten Kitchen
- Cinnamon Sugar French Toast Bites :: Multiply Delicious
- Breakfast Pizza :: My Recipes
- Egg Muffins :: Backyard Chickens
- Buttermilk Blueberry Breakfast Cake :: Alexandra’s Kitchen
If you have a creative breakfast idea, I’d love to hear it.

#5 looks wonderfully delicious, but I’m not sure it can be categorized as “healthier eating.” 🙂 We, too, get in a breakfast rut and try to think of new things to eat. I recently bought a loaf of Italian bread, which we had with a pasta meal. There was a lot left over, so this past Saturday, I made grilled peanut butter and jam sandwiches with the bread. I just buttered one side of a slice and spread peanut butter and grape jam on the second slice and stuck them together. I put the buttered side down on the hot griddle, then butter the top slice. Brown on both sides and there you have it! My daughter loved them, and I’ve had to make them two more times since then!

Ha ha! I was thinking that about #5 too. I guess it’s more of a break from the box. GREAT idea on the grilled PB&J. What a fun way to use something differently.

Oh, I struggle with breakfast as well! I think the breakfast pizza is a great idea! the crust could be made the night before and then add the toppings in the morning for a fast breakfast. Must try this!

I was thinking that I might even be able to sneak in some veggies in the morning with that one! 🙂

When we do cereal, we stick with things like Cheerio’s and Life. The healthier versions. They do offer a good source of iron and folic acid. 🙂 But honestly, they aren’t filling so they are better for snacks then actual breakfast. 🙂

You’re so right Christin. We eat those as snacks too. 🙂 Thanks for stopping by!
