Fruit Crisp Topping

I’ve told you how much I love fall and all the smells and tastes that come with it. For some reason, the smell of baking apples — with lots of cinnamon! — is a fall favorite of mine. Last night I had the taste for apple crisp. The last time I made it, I only used half of the topping I’d mixed up. I froze the other half, so making it again last night meant I just had to peel some apples.

The problem was that I didn’t want to heat up the oven for half a pan of apple crisp. Once again, my toaster oven came to the rescue. I have a toaster oven that’s also a mini convection oven. (You can see it on Amazon here.)  I make Broiled Tilapia Parmesan, corn bread, and muffins with it. So why not apple crisp?

I cut up my apples, tossed them with about a teaspoon of sugar, a couple of teaspoons of flour, and some sprinkles of cinnamon. (I totally measured like my grandma used to… no measuring spoons at all. Grandma would be proud!)  I put them into a sprayed pan.

I hadn’t taken the crisp topping out of the freezer ahead of time, so I put it in a bowl and broke up the frozen butter.

I sprinkled the topping on and then baked it in my preheated toaster/convection oven at 350 degrees for about 30 minutes.

It was delicious… just like from the oven. I would show you a picture of the finished product, but my family devoured it after dinner!

Here’s my grandma’s crisp topping recipe that I used. The directions say that it makes enough to cover fruit in a 7 x 11 loaf pan, but I made two batches in my 9 1/2 x 6 1/4 toaster oven baking pan. Maybe I don’t use as much topping as my grandma did!

Fruit Crisp Topping

1 c. flour
1 c. quick oats
1/2 c. brown sugar, packed
1/2 t. salt
1/4 t. baking soda
1/4 t. baking powder

Mix all of these ingredients. Then cut in 1/2 c. butter.
*I used less than 1/2 c. and used the spreadable butter with canola oil.

Sprinkle mixture over fruit. Bake at 350 for 25-30 minutes until slightly browned.
