One of my biggest downfalls with summer grilling is having the meat prepared ahead of time. I love the flavor of a good marinade, but I rarely remember to get the meat IN the marinade in time to get to the grill on time.
Here’s a marinade that only needs to be made about 20 minutes before you put the meat on the grill. You CAN marinate longer, but you don’t have to. My trick for the quick marinating time is to make a second batch of the marinade to brush on the meat during grilling.
We’ve tried this marinade with chicken and pork chops. It was awesome with both.
Teriyaki Marinade Grilled Chicken
Before you begin, have two bowls ready. One bowl should be large enough to hold 1/2 the marinade and the meat. The other can be a small bowl used to brush on additional marinade during grilling.
In each bowl mix:
2 Tbl. olive oil
2 tsp. soy sauce
1/2 tsp. ground ginger
1/4 tsp. garlic powder
2 tsp. honey
1/2 tsp. vinegar
Add up to 2 lbs. of chicken to the larger bowl. Make sure that each piece gets coated with the marinade.
Cover and place in the refrigerator for 20 minutes.
After the grill is heated, cook the meat as you usually would, brushing on additional marinade as it cooks.
