Menu Plan Strategy: 15 Minute Prep Dinners

It’s time to streamline dinner prep even more. With a business to run and homeschooling to do (and maybe a little housework thrown in there too!), I just haven’t been in the mood to do major cooking lately.

A couple of weeks ago, I spent a chunk of time on Sunday afternoon pre-prepping a majority of our meals for the week. This week’s strategy is a bit different.

The goal this week is to spend 15 minutes or less on each day’s dinner prep. The goal is for each meal to take 15 minutes or less to prep.

:: Breakfasts ::

Easy Bananas & Cream Oatmeal
Eggs, Sausage, Fresh Fruit
Cereal & Fruit
Homemade Granola, Fresh Fruit
Lemon Blueberry Bread, Scrambled Eggs

:: Lunches ::

Sandwiches, Fresh Veggies, Fresh Fruit
Egg Salad with Tomatoes
Chicken BLT Salads (recipe coming soon)
Leftovers

:: Dinners ::

Italian Chicken, Potato & Green Beans Bake
Mexican Baked Potatoes (recipe coming soon)
Taco Salads
Italian Spice Rub Grilled Chicken*, Baked Sweet Potatoes, Steamed Broccoli
Chicken Fried Rice (made with leftover non-seasoned grilled chicken)
Crock Pot Black Bean Soup, Gluten-Free Cornbread (recipe coming soon)

*I’m cheating on this one. The prep only takes ME 15 minutes. The grilling is all my husband. 🙂

:: Homemade Snacks ::

Soft Ginger Cookies {gluten-free}
Ranch Style Seasoned Popcorn
Homemade Chewy Granola Bars

    Looks like a week full of yummy meals at your house! I can’t wait to read your gluten-free cornbread recipe. My toddler loves cornbread!
