Menu Plan Monday: Life After Whole30

Our Whole30 challenge is officially done. But we’re not. 😉

Now that we’re done with the self-imposed food restrictions and have experienced how good it feels to eat more whole foods, I think we might be hooked. Jason’s still going with the Whole30 regimen but with some natural sweeteners added in to liven things up a bit. He’s had a sinus infection and felt crummy. So he doesn’t have a good baseline for how good he can feel with the Whole30 food choices. Once he’s feeling better, then he’ll start adding foods back in.

I added dairy in this week. I’m sticking with high-quality organic milk for now. I did sample a few crazy things this week (Chuck E. Cheese dessert pizza, Domino’s pizza, and some jelly beans – yikes!). I did okay with some of them, but the Domino’s pizza about put me over the edge this weekend. I don’t think I realized how lousy I felt before until I made these changes and felt so much better. I’m making it a point to stick to the healthier foods and not try too much crazy stuff this week. Lesson learned.

Here’s our plan for this week.

:: Breakfasts ::

Plantain pancakes, mango
Green smoothies, hard-boiled eggs
Eggs, sweet potato hash browns, strawberries
Pumpkin muffins (still working on a good recipe), sausage, oranges
Eggs, bacon, warm cinnamon apples
Sauteed sweet potatoes & sausage, kiwi slices
Paleo banana bread, sauteed sausage & mushrooms

:: Lunches ::

Beef vegetable soup with homemade beef broth
Hot dogs with chili sauce, veggie tray
Leftovers
Large salads with chicken, spinach, greens, avocado, tomatoes, carrots, cucumber, green onions
Chicken taco salad topped with homemade guacamole
Chicken salad with homemade mayo over spinach, spring mix, tomatoes & peppers

:: Dinners ::

Crock Pot Stuffed Peppers, fruit bowl
Broiled fish, baked sweet potatoes, steamed broccoli
Mexican Skillet with chicken, peppers, mushrooms, broccoli, salsa & guacamole
Broiled salmon, oven-roasted veggies (carrots, mushrooms, broccoli, peppers)
Italian Spice Rub Grilled Chicken, Cinnamon Hashies, steamed cauliflower
Almond-crusted chicken, oven-roasted veggies (carrots, mushrooms, broccoli, peppers)

:: New Snacks We’re Trying ::

Avocado Chocolate Mousse or maybe Creamy Chocolate Pudding
Strawberry Coconut Milk Ice Cream
Baked Apple Chips

    Your menu sounds great! I use Money Saving Mom’s pumpkin chocolate chip muffin recipe (without the chocolate chips) and it is delicious. I’m not sure what restrictions you have with Whole30 so I don’t know if it is suitable or could be made suitable but it is very yummy. 🙂 Found you at Menu Plan Monday.

      Thanks! I’ll head over and check that out. I have a pumpkin bundt cake recipe that makes amazing muffins too. I’m not sure if I could make that fit what we’re doing or not. Food for thought! 😉
